Addictive Homemade Granola

After finishing off a long run, when your muscles are screaming for protein... it's time to go Seriously Nutty!  This is scrumptiously delicious!

2 cups old fashioned oatmeal
1 cup sweetened shredded coconut
1 cup sliced almonds
1 cup pecans
1/4 cup honey or Maple Syrup
1/4 cup canola oil
1 tsp vanilla
1 tsp cinnamon

Mix together in a large bowl and then spread on a sheet pan lined parchment paper.  Bake for 25-35 minutes at 350 degrees, stirring every few minutes to toast evenly. Cool then stir in 2 cups of your favorite assorted dried fruits like cranberries, cherries, raisins, apricots, banana chips. Don't be like me but If you want to ruin a perfectly healthy recipe....dark chocolate chips are awesome! Serve with cold milk, yogurt or just eat as a snack. Enjoy!!
